- Preheat the oven to 350°F (175°C).
- In a blender, combine the cottage cheese, oats, eggs, honey, vanilla extract, lemon zest, lemon juice, and salt. Blend until smooth.
- Gently fold in the fresh raspberries.
- Pour the mixture into a greased baking dish.
Baking
- Bake for 30-35 minutes, or until the top is golden and the center is set.
- Allow to cool slightly before serving. Enjoy warm or chilled!
Notes
This bake pairs well with yogurt and nuts for breakfast, or can be served warm with extra honey as a dessert. Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
