  • 1 lb boneless, skinless chicken breasts
  • 1 cup tzatziki sauce
  • 2 cups cooked rice
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
Seasoning and Garnish
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large baking dish, layer the cooked rice at the bottom.
  3. Place the chicken breasts on top of the rice and season with salt and pepper.
  4. Spread the tzatziki sauce evenly over the chicken.
  5. Add the halved cherry tomatoes and crumbled feta cheese on top.
Baking
  1. Cover the baking dish with aluminum foil and bake for 25-30 minutes or until the chicken is cooked through.
  2. Remove the foil and bake for an additional 10 minutes to brown the top.
  3. Garnish with fresh parsley before serving.

Notes

This casserole can be served with a fresh salad or warm pita bread. For meal prep, make in advance and reheat when ready to eat. Store leftovers in an airtight container in the refrigerator for up to 3 days.
