Preparation
- Preheat the oven to 375°F (190°C).
- In a large baking dish, layer the cooked rice at the bottom.
- Place the chicken breasts on top of the rice and season with salt and pepper.
- Spread the tzatziki sauce evenly over the chicken.
- Add the halved cherry tomatoes and crumbled feta cheese on top.
Baking
- Cover the baking dish with aluminum foil and bake for 25-30 minutes or until the chicken is cooked through.
- Remove the foil and bake for an additional 10 minutes to brown the top.
- Garnish with fresh parsley before serving.
Notes
This casserole can be served with a fresh salad or warm pita bread. For meal prep, make in advance and reheat when ready to eat. Store leftovers in an airtight container in the refrigerator for up to 3 days.
