  • 2 cups cooked, shredded chicken Use leftover rotisserie chicken for added flavor.
  • 1/2 cup ranch dressing
  • 1 cup shredded cheese (cheddar or Mexican blend) You can also use pepper jack for a spicier version.
  • 4 large flour tortillas Corn tortillas can be used for a gluten-free option.
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions

Preparation
  1. In a large bowl, mix the shredded chicken with ranch dressing until well coated.
  2. Heat a large skillet over medium heat and lightly grease it with cooking spray or oil.
Cooking
  1. Place one tortilla in the skillet, then layer half of the chicken mixture, cheese, diced bell peppers, and onions on one half of the tortilla.
  2. Fold the tortilla over to cover the filling and press down gently.
  3. Cook for 3-4 minutes on each side or until the tortilla is golden brown and the cheese is melted.
  4. Repeat with the remaining tortillas and filling.
  5. Cut into wedges and serve hot.

Notes

Serve hot with fresh salsa, guacamole, or a light salad. For extra indulgence, top with sour cream or additional ranch dressing.
