- In a large skillet, heat olive oil over medium heat.
- Add chicken breast and season with salt and pepper. Cook until golden brown and cooked through, about 6-7 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add asparagus and cook for 2-3 minutes until tender.
- Add the orzo and chicken broth, bringing to a simmer. Cook for about 10 minutes until the orzo is tender and has absorbed most of the liquid.
- Stir in the heavy cream and slice the cooked chicken, adding it back to the skillet.
- Mix everything well, adjust seasoning if necessary, and serve hot with grated Parmesan cheese if desired.
Notes
This dish can be served on its own or with a light side salad or your favorite bread. For freshness, consider adding chopped herbs before serving. Leftovers can be stored in an airtight container for up to three days.
