  • 2 cups rolled oats
  • 1 cup milk (or a dairy-free alternative) Use your preferred milk type
  • 1/2 cup Greek yogurt Can substitute with regular yogurt or dairy-free option
  • 1/2 cup protein powder Flavor of your choice (vanilla or berry recommended)
  • 1/2 cup honey or maple syrup For sweetness
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup mixed berries (fresh or frozen) Can substitute with other fruits
  • 1/4 cup chopped nuts (optional) Almonds, walnuts, or pecans can be used

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the rolled oats, protein powder, baking powder, and salt.
  3. In another bowl, whisk together the milk, Greek yogurt, honey, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Gently fold in the mixed berries and nuts if using.
  6. Pour the mixture into a greased baking dish and spread it evenly.
  7. Bake for 25-30 minutes or until golden brown and set.
  8. Allow to cool for a few minutes before slicing and serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to five days. For longer storage, freeze in individual portions. Thaw overnight and reheat when ready to serve. Consider adding toppings such as fresh fruit or nuts before serving.
