  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium bell pepper, chopped
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 4 cups beef broth Use low-sodium broth if preferred.
  • 2 tsp chili powder Adjust based on heat preference.
  • 1 tsp cumin
  • to taste Salt and pepper Season according to taste.
  • 2 tbsp olive oil For sautéing.

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until soft.
  2. Add the ground beef to the pot and cook until browned.
  3. Stir in the carrots, celery, and bell pepper, cooking for about 5 minutes until they begin to soften.
  4. Add the kidney beans, diced tomatoes, and beef broth.
  5. Season with chili powder, cumin, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 20-30 minutes, until the vegetables are tender.
  7. Serve hot and enjoy!

Notes

Serve hot, topped with fresh herbs or shredded cheese. Store leftovers in an airtight container for up to 5 days; freeze for up to 3 months.
