Beef Preparation
  • 2 lbs beef (chuck roast), cubed Opt for cuts known for stewing for best tenderness.
  • 1 teaspoon salt
  • 0.5 teaspoon celery salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 2 tablespoons flour
  • 2-3 tablespoons olive oil For sautéing the beef.
Soup Ingredients
  • 3 tablespoons butter
  • 1 cup yellow onion, diced
  • 1 cup carrots, diced
  • 2 ribs celery, diced
  • 8 oz baby bella mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 0.5 cup grape juice
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon dried parsley
  • 6 cups beef broth Low-sodium recommended.
  • 1 cup chicken broth
  • 1 cube beef bouillon
  • 1 leaf bay leaf
  • 0.75 lb mini yellow potatoes, halved
  • 1 cup pearl barley

Method
 

Preparation
  1. Pat the beef cubes dry with a paper towel. Season with salt, celery salt, black pepper, garlic powder, and onion powder, then toss in flour.
Sautéing
  1. In a heavy-bottomed pot, heat olive oil over medium-high heat. Brown the beef on all sides, then remove and set aside.
  2. Melt the butter in the same pot, then add onions, carrots, and celery. Sauté until softened, approximately 5-7 minutes. Add mushrooms and garlic, cooking for a few more minutes until fragrant.
Building Flavor
  1. Stir in tomato paste, grape juice, Worcestershire sauce, and Dijon mustard. Add thyme, oregano, and parsley, stirring to combine.
  2. Return the beef to the pot with beef broth, chicken broth, bouillon cube, bay leaf, potatoes, and barley. Bring to a gentle boil and then reduce heat to low, simmering for 1.5 to 2 hours until beef is tender.

Notes

Serve garnished with fresh parsley. Pairs well with crusty bread or a light salad. For extra warmth, consider adding chili flakes.
