Ingredients
  

Salad Base
  • 1 cup orzo pasta Cook according to package instructions.
  • 1 medium sweet potato, diced Adds sweetness.
  • 1 cup Brussels sprouts, halved Roast with sweet potatoes.
  • 1 can chickpeas, rinsed and drained For protein.
  • 1/2 cup red onion, thinly sliced Adds a bit of tang.
  • 1/4 cup fresh herbs (parsley, basil, or cilantro) For a fresh flavor.
  • 1/2 cup walnuts, chopped For crunch.
Dressing
  • Olive oil To taste.
  • Salt and pepper To taste.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced sweet potato and Brussels sprouts with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.
  3. Meanwhile, cook the orzo pasta according to package instructions. Drain and set aside.
Assembly
  1. In a large bowl, combine the cooked orzo, roasted vegetables, chickpeas, red onion, and chopped walnuts.
  2. Drizzle with olive oil and add salt and pepper to taste.
  3. Stir in the fresh herbs and mix until well combined.
Serving
  1. Serve immediately or store in the refrigerator for meal prep.

Notes

Make sure to chop your veggies into similar sizes for even roasting. Customize your salad by adding seasonal veggies or nuts; bell peppers and zucchini are excellent additions. For a tangy flavor, consider adding a splash of lemon juice or balsamic vinegar just before serving. Experiment with different herbs to switch up the flavor profile of the salad.
