  • 1 lb lean ground meat (like chicken or turkey) Cooked until browned
  • 1 can black beans Rinsed and drained
  • 2 cups cauliflower rice or regular rice Use as the base
  • 1 cup salsa For topping
Fresh Toppings
  • 1 medium avocado Diced
  • 1/4 cup fresh cilantro Chopped
  • 1 medium diced tomatoes Optional topping

Method
 

Cooking
  1. In a skillet, cook the lean ground meat until browned.
  2. Scramble the eggs in a separate pan.
  3. In bowls, layer cauliflower rice or rice, then add the cooked ground meat and scrambled eggs.
  4. Top with black beans, salsa, and any fresh toppings of your choice.
  5. Serve immediately or store in the fridge for an easy meal prep option.
