Ingredients
  

For the Meatballs
  • 1 pound ground beef
  • 1/4 cup breadcrumbs (or almond flour for keto)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper
For the Soup
  • 4 cups beef broth
  • 2 cups zucchini, spiralized into noodles
  • 1 cup carrots, diced
  • 1 cup diced tomatoes
  • 1/2 cup onion, chopped
  • to taste fresh basil for garnish

Method
 

Preparation
  1. In a mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Form into meatballs.
Cooking
  1. Place meatballs in the slow cooker.
  2. Add beef broth, carrots, diced tomatoes, and onion to the slow cooker.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, add the zucchini noodles.
  5. Serve hot, garnished with fresh basil.

Notes

Serve the soup hot in deep bowls, or pair with whole-grain bread. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
