Preparation
- Heat olive oil in a large skillet over medium heat.
- Add sliced mushrooms and bell peppers, sautéing until tender.
Cooking
- Push the veggies to the side and add the ground beef or turkey to the skillet.
- Cook until browned and fully cooked, then season with salt and pepper.
- Mix the sautéed vegetables with the cooked meat.
- Top with shredded provolone cheese and cover the skillet to allow the cheese to melt.
Serving
- Serve over cooked rice or cauliflower rice, if desired.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 4 days. Can be frozen for up to 3 months.
