Ingredients
  

Pasta and Vegetables
  • 8 oz whole wheat pasta Cook al dente for best texture
  • 1 cup cherry tomatoes, halved Fresh and juicy
  • 1 cup cucumber, diced Add crunch
  • 1/2 cup bell pepper, diced Colorful and sweet
  • 1/4 cup red onion, finely chopped Add flavor
  • 1/4 cup olives, sliced Briny taste
  • 1/4 cup feta cheese, crumbled Optional for vegans
Dressing
  • 2 tbsp olive oil For a healthy fat source
  • 1 tbsp red wine vinegar Adds acidity
  • to taste Salt and pepper Season as desired
Garnish
  • to taste Fresh basil or parsley For garnish and flavor

Method
 

Preparation
  1. Cook the whole wheat pasta according to package instructions. Drain and cool.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, olives, and feta cheese.
Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  2. Pour the dressing over the pasta salad and toss to combine.
Serving
  1. Garnish with fresh basil or parsley before serving. Enjoy!

Notes

Store in an airtight container for up to 3 days. Stir before serving as the dressing may settle. For best flavor, store the dressing separately if making ahead.
