Preparation and Marination
- In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and pepper.
- Place the chicken breasts in a resealable plastic bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes, or up to overnight for more flavor.
Baking
- Preheat your oven to 400°F (200°C).
- On a large baking sheet, arrange the marinated chicken breasts. Scatter the cherry tomatoes, bell peppers, and red onion around the chicken.
- Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove from the oven and let it rest for 5 minutes before serving. Garnish with fresh parsley.
Notes
Serve with quinoa or a fresh green salad. Can also be tucked into pita bread or served over couscous.
