  • 2 cups quinoa or brown rice Cook according to package instructions.
Protein Ingredients
  • 2 cups cooked chicken breast, diced If using raw chicken, season and sauté.

Vegetable Ingredients
  • 1 cup cherry tomatoes, halved
  • 1 piece bell pepper, diced
  • 1 piece avocado, sliced Add just before serving.
  • 2 cups spinach or kale
  • 1 cup corn (fresh or frozen) Cook frozen corn according to package directions.
Flavoring Ingredients
  • 4 tablespoons olive oil Divided use.
  • 4 tablespoons lemon juice Divided use.
  • to taste salt and pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • fresh herbs for garnish (like cilantro or parsley)

Method
 

Preparation
  1. Cook quinoa or brown rice according to package instructions. Once cooked, allow it to cool while you prepare the other ingredients.
  2. If using raw chicken, season it with salt, pepper, garlic powder, and paprika. Sauté in a pan with 1 tablespoon of olive oil until fully cooked. Dice it into bite-sized pieces once cooled.
  3. Rinse and chop the vegetables—half the cherry tomatoes, dice the bell pepper, and slice the avocado. If using frozen corn, cook according to package directions.
Assembly
  1. In meal prep containers, start with a layer of quinoa or brown rice, followed by a portion of cooked chicken, black beans, tomatoes, bell pepper, corn, and spinach or kale.
  2. Top each bowl with sliced avocado and drizzle with 1 tablespoon of olive oil and 1 tablespoon of lemon juice. Season with additional salt and pepper if desired.
  3. Sprinkle fresh herbs over the top for added flavor and freshness.
  4. Seal the meal prep containers and store them in the fridge for up to 5 days.
