For the Bake
  • 3 large russet or Yukon Gold potatoes, diced into 1-inch cubes
  • 1 pound lean ground beef (90% or higher)
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese (halal)
  • 1/4 cup sliced green onions for garnish
  • 1/4 cup plain Greek yogurt (as a healthy topping)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Lightly grease a large baking sheet and a 9x13 inch baking dish.
  2. Place the diced potatoes on the baking sheet. Drizzle with half of the olive oil and season with a pinch of salt and pepper. Toss well to coat.
  3. Roast the potatoes for 20-25 minutes, or until they are golden brown and soft inside.
Cooking
  1. While the potatoes roast, heat the remaining olive oil in a large skillet over medium-high heat.
  2. Add the ground beef to the skillet. Cook until browned, breaking it into small crumbles with a spoon. Drain any excess liquid if necessary.
  3. Add the onions and bell peppers to the beef. Cook for about 5-7 minutes until the vegetables are soft.
  4. Stir in the minced garlic, smoked paprika, cumin, salt, and black pepper. Cook for another 2 minutes until fragrant.
  5. In the prepared baking dish, combine the roasted potatoes and the beef mixture. Stir gently to mix.
  6. Sprinkle the shredded cheese evenly over the top.
  7. Place the dish in the oven for 5-10 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven. Garnish with fresh green onions and serve with a dollop of Greek yogurt.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. This dish is also suitable for freezing. Let it cool completely before transferring to a freezer-safe container.
