  • 8 oz pasta (e.g., lasagna noodles, broken into pieces) Substitute with whole grain or gluten-free pasta as desired.
  • 4 cups rich tomato broth Can use vegetable broth as a substitute.
  • 2 cups spinach or kale Can replace spinach with kale or Swiss chard.
  • 1 cup ricotta cheese Can use low-fat cream cheese for a creamier texture.
  • 1 cup mozzarella cheese, shredded Add more for extra cheesiness.
  • 1/4 cup grated Parmesan cheese
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Method
 

Cooking
  1. In a large pot, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add onion and garlic; cook until tender.
  3. Pour in the tomato broth and bring to a boil.
  4. Stir in the broken pasta and herbs.
  5. Reduce heat and simmer until pasta is cooked.
  6. Add spinach or kale and cook until wilted.
  7. Serve in bowls with a dollop of ricotta, sprinkle mozzarella, and top with Parmesan cheese.

Notes

For extra flavor, consider browning the beef with a sprinkle of Italian seasoning or adding red pepper flakes for a spicy kick. Store leftovers in an airtight container for up to 4 days, or freeze for up to 3 months. Thaw before reheating.
