  • 2 cups mixed vegetables (bell peppers, broccoli, carrots) Use any vegetables you have on hand.

  • 1 tablespoon olive oil For sautéing.
  • 2 cloves garlic, minced Adds flavor.

Method
 

Preparation
  1. In a large skillet, heat olive oil over medium heat.
  2. Add minced garlic and grated ginger, sauté for 1 minute until fragrant.
Cooking
  1. Add ground chicken to the skillet. Cook until browned and fully cooked, about 5-7 minutes.
  2. Mix in the mixed vegetables and stir-fry for another 3-5 minutes until vegetables are tender.
  3. Pour in soy sauce and season with salt and pepper to taste.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze for up to 3 months. Chop vegetables and mince garlic ahead of time for quicker prep.
