Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onions and garlic, sautéing until translucent.
  3. Add ground beef and cook until browned. Drain excess fat.
  4. Stir in butternut squash, black beans, kale, bell pepper, and seasonings. Mix well and cook for about 10 minutes until vegetables are tender.
  5. Transfer the mixture to a casserole dish and top with shredded cheese.
  6. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
  7. Let it cool slightly, then serve warm.

This casserole pairs wonderfully with a side salad or crusty bread. Fresh herbs like parsley or cilantro can add a nice touch.
