  • 2 pieces chicken breasts, cooked and shredded
  • 1 cup brown rice, cooked
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup cherry tomatoes, halved
  • 1 pieces avocado, diced
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 pieces Juice of 1 lime
  • Taco seasoning to taste
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the shredded chicken with taco seasoning, salt, and pepper.
  2. In serving bowls, layer the cooked brown rice, black beans, and corn.
  3. Top with seasoned chicken, cherry tomatoes, avocado, and red onion.
  4. Drizzle with lime juice and garnish with cilantro.
  5. Serve immediately and enjoy!

Notes

Feel free to adjust the taco seasoning to your preference or make a homemade mix. Leftovers can be stored in airtight containers in the refrigerator for up to three days.
