  • 1 large egg
  • 1/3 cup panko bread crumbs Can substitute with regular breadcrumbs.
  • 1 cup riced broccoli Can use pre-riced or finely chopped frozen broccoli.
  • 1/3 cup shredded sharp cheddar cheese For a more mild flavor, use mozzarella.
  • 1/2-1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Method
 

Preparation
  1. In a large bowl, combine the ground turkey, egg, panko bread crumbs, riced broccoli, shredded cheddar cheese, salt, black pepper, garlic powder, and onion powder. Mix until well combined.
  2. Preheat your oven to 400°F (200°C).
  3. Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
Cooking
  1. Bake the meatballs for 20-25 minutes or until golden brown and cooked through. Ensure they reach an internal temperature of 165°F for safety.
  2. For a crispy exterior, air-fry at 375°F (190°C) for about 15 minutes, flipping halfway through.

Notes

These meatballs are versatile; serve with pasta, marinara, or as appetizers. Store leftovers in the fridge for 3-4 days or freeze for up to 3 months. You may substitute ground turkey with ground chicken or beef.
