Method
 

Preparation
  1. In a large bowl, combine the shredded chicken, diced avocado, red onion, and celery.
  2. In a separate small bowl, mix together the Greek yogurt (or mayonnaise), lemon juice, salt, and pepper.
  3. Pour the dressing over the chicken mixture and gently toss to combine.
  4. Serve on its own or over a bed of mixed greens if desired.
