Ingredients
  

For the Citrus Sauce
  • 1/2 cup Orange juice
  • 1 tablespoon Soy sauce Use tamari for gluten-free
  • 1 tablespoon Honey Substitute with maple syrup for vegan option
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
For the Salmon Bowls
  • 4 pieces Salmon fillets Fresh or thawed from frozen
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 2 cups Broccoli, chopped Can be steamed or sautéed
  • 2 cups Rice, cooked Use jasmine, basmati, or brown rice

Method
 

Preparation
  1. In a bowl, mix orange juice, soy sauce, honey, minced garlic, and grated ginger to create the citrus sauce.
  2. Season salmon fillets with salt and pepper.
Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Add salmon and cook for 4-5 minutes on each side until cooked through.
  3. Add the citrus sauce and simmer for a few minutes until glossy.
  4. In another pot, cook rice according to package instructions.
  5. Steam or sauté broccoli until tender.
Serving
  1. To serve, place rice in a bowl, top with salmon and broccoli, and drizzle with extra sauce if desired.

Notes

Great meal prep option for lunches. Consider garnishing with sesame seeds or sliced green onions.
