Fruit Ingredients
  • 2 cups pineapple, diced Choose ripe and fresh pineapple for best flavor.
  • 2 cups strawberries, sliced Use firm, bright red strawberries.
  • 1 cup grapes, halved Any variety of grapes can be used.
  • 1 cup kiwi, peeled and diced Make sure to use a sharp knife for clean cuts.
  • 1 cup mandarin oranges, drained Canned oranges work, but drain them well.
  • 1/4 cup shredded coconut Optional; can be omitted or replaced with nuts.
Dressing Ingredients
  • 1 tablespoon honey Can substitute with maple syrup for a vegan option.
  • 1 tablespoon lime juice Freshly squeezed lime juice is recommended.

Method
 

Preparation
  1. In a large bowl, combine the diced pineapple, sliced strawberries, halved grapes, diced kiwi, and mandarin oranges.
  2. In a small bowl, whisk together the honey and lime juice.
  3. Drizzle the honey-lime mixture over the fruit and toss gently to combine.
  4. Sprinkle the shredded coconut on top and serve chilled.

Notes

Store in an airtight container in the refrigerator and consume within 1 to 2 days for best texture. Consider storing the dressing separately if anticipating leftovers.
