  • 2 cups Hatch green chiles, roasted and peeled
  • 1 pound ground beef or turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
Spices
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste Salt and pepper

  • 1 cup shredded cheese (optional)

Method
 

Preparation
  1. In a large skillet, brown the ground meat over medium heat. Drain any excess fat if necessary.
  2. Add the diced onion and minced garlic into the skillet, cooking until softened and aromatic.
  3. Stir in the diced tomatoes, black beans, cumin, chili powder, and the roasted Hatch chiles, mixing well.
Cooking
  1. Simmer the mixture for about 15-20 minutes to allow the flavors to meld beautifully.
  2. Season with salt and pepper to taste.
  3. If using, sprinkle shredded cheese on top and let it melt before serving.

Notes

Serve with cornbread, tortilla chips, or over rice. Garnish with sour cream, fresh cilantro, or avocado slices for extra flavor.
