  • 2 cups cooked wild rice
  • 2 pieces chicken breasts, cooked and shredded Use leftover or rotisserie chicken for convenience.
  • 2 tablespoons harissa paste Adjust quantity for desired spice level.
  • 1 piece red bell pepper, chopped
  • 1 cup cucumber, diced
  • 1/2 piece red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled Keep separate until serving for freshness.
  • 1 piece lemon, juiced
  • 2 tablespoons olive oil Drizzle additional for serving if desired.
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the cooked wild rice, shredded chicken, bell pepper, cucumber, red onion, and parsley.
  2. In a separate small bowl, mix together the harissa paste, lemon juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Top with crumbled feta cheese before serving.

Notes

This dish can be served warm or cold. Pairs well with grilled vegetables or pita bread. Can be made one day in advance; just keep feta separate until ready to serve.
