  • 1 pound ground turkey (lean)
  • 2 large sweet potatoes, peeled and cut into 1/2-inch cubes
  • 1 medium onion, diced
  • 1 large bell pepper (any color), chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
Spices
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Optional Topping
  • 1 cup shredded cheddar cheese optional
  • Fresh parsley or cilantro for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and lightly grease a 9x13 inch baking dish with olive oil.
  2. In a large skillet over medium heat, add a drizzle of olive oil and the ground turkey. Cook until the turkey is browned and crumbled. Drain any excess liquid.
  3. In a large mixing bowl, combine the cooked turkey, cubed sweet potatoes, diced onion, and chopped bell pepper.
  4. Drizzle the olive oil over the mixture. Add the minced garlic, cumin, smoked paprika, chili powder, salt, and pepper. Toss everything together until the vegetables and meat are evenly coated in spices.
Baking
  1. Spread the mixture evenly into the prepared baking dish.
  2. Cover the dish with aluminum foil and bake for 20 minutes.
  3. Remove the foil and stir the mixture gently. Bake for another 15 to 20 minutes, or until the sweet potatoes are soft and slightly browned on the edges.
  4. If using cheese, sprinkle it over the top during the last 5 minutes of baking until it is melted and bubbly.
  5. Remove from the oven and let it cool for a few minutes. Garnish with fresh herbs before serving.

Notes

This dish can be served hot, accompanied by a salad or crusty bread. Leftovers can be stored in the refrigerator for 3-4 days or frozen for up to three months. For added flavor, consider sautéing the onions and bell peppers before mixing them with the turkey.
