  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 medium bell pepper, chopped (any color)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the diced sweet potatoes, chopped bell pepper, and diced onion. Toss with olive oil, salt, and pepper.
Cooking
  1. In a large oven-safe skillet or baking dish, add the ground turkey and cook over medium heat until browned, breaking apart as it cooks.
  2. Mix in the minced garlic, paprika, cumin, and oregano. Stir to combine.
  3. Add the seasoned turkey to the bowl of roasted vegetables and stir to ensure even distribution.
  4. Spread the mixture evenly in the skillet and transfer to the oven. Bake for about 25-30 minutes, or until sweet potatoes are tender.
  5. Let it cool slightly before garnishing with fresh parsley if desired.

Notes

Feel free to add your favorite veggies such as zucchini or spinach. To add some heat, consider red pepper flakes or diced jalapeños.
