  • 1 cup couscous can use instant for quicker prep
  • 2 cups water or broth using broth for extra flavor
  • 1 cucumber diced for tzatziki
  • 1 cup cherry tomatoes halved for topping
  • 1 bell pepper diced any color
  • 1 cup Greek yogurt for tzatziki
  • 1 clove garlic minced for tzatziki
  • 1 tbsp lemon juice for tzatziki
  • to taste Salt and pepper for seasoning
  • Fresh herbs like dill or parsley for garnish

Method
 

Cooking Couscous
  1. In a saucepan, bring water or broth to a boil. Add the couscous, cover, and remove from heat.
  2. Let it sit for 5 minutes, then fluff with a fork.
Cooking Turkey
  1. In a skillet, cook ground turkey over medium heat until browned and cooked through, about 7-10 minutes.
  2. Season with salt and pepper.
Making Tzatziki
  1. In a small bowl, mix Greek yogurt, minced garlic, lemon juice, diced cucumber, and salt to make the tzatziki sauce.
Assembling the Bowl
  1. Assemble the bowls: start with a base of couscous, add cooked turkey, and top with cherry tomatoes and bell pepper.
  2. Add a generous dollop of tzatziki.
  3. Garnish with fresh herbs and serve immediately.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Store tzatziki separately to maintain freshness. Can be frozen for up to two months.
