  • 1 bell pepper, diced bell pepper, diced Any color bell pepper works.
  • 1 cucumber, diced cucumber, diced Cool and crunchy.
Tzatziki Sauce
  • 1 cup Greek yogurt Can substitute with sour cream or dairy-free yogurt.
  • 1 clove garlic, minced Enhances flavor.
  • 1 tbsp lemon juice Adds acidity.
  • Salt and pepper Salt and pepper to taste
Garnish

Method
 

Prepare Couscous
  1. In a saucepan, bring water or broth to a boil. Add couscous, cover, and remove from heat. Let sit for 5 minutes, then fluff with a fork.
Cook Ground Turkey
  1. In a skillet, cook ground turkey over medium heat until browned and cooked through, about 7-10 minutes. Season with salt and pepper.
Make Tzatziki Sauce
  1. In a small bowl, mix Greek yogurt, minced garlic, lemon juice, diced cucumber, and salt to make the tzatziki sauce.
Assemble Bowls
  1. Start with a base of couscous, add cooked turkey, and top with cherry tomatoes, bell pepper, and a generous dollop of tzatziki.

Notes
