  • 1 lb ground beef Lean ground beef recommended.
  • 2 medium sweet potatoes, diced Can use pre-peeled and diced for convenience.
  • 1 medium zucchini, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil For sautéing.
  • to taste Salt and pepper
Optional Toppings
  • fresh parsley For garnish.
  • cheese Shredded cheese can be added.
  • avocado Sliced avocado adds creaminess.

Method
 

Preparation
  1. In a large skillet, heat olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until soft and fragrant.
Cooking
  1. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned.
  2. Stir in the diced sweet potatoes and zucchini. Season with salt and pepper to taste.
  3. Cover the skillet and let everything cook until the vegetables are tender and the sweet potatoes are fully cooked, about 15-20 minutes.
Serving
  1. Serve in bowls and top with optional toppings like fresh parsley, cheese, or avocado.

Notes

Leftover bowls can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, simply warm them in the microwave or on the stove over low heat. Can also freeze for up to 3 months.
