  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) enchilada sauce
  • 1 cup corn kernels (fresh or frozen)
  • 2 cups cooked rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Tortilla chips (for serving)
  • Chopped cilantro (for garnish)

Method
 

Cooking
  1. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  2. Add chopped onion and minced garlic; cook until the onion is translucent.
  3. Stir in the black beans, enchilada sauce, corn, rice, chili powder, cumin, salt, and pepper.
  4. Bring to a simmer, then reduce heat and cook for 5-7 minutes until heated through.
  5. Sprinkle shredded cheese on top and cover until melted.
  6. Serve with tortilla chips and garnish with chopped cilantro.

Notes

For variations, try substituting ground turkey for the beef, or use different types of cheese and vegetables as desired.
