- In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
- Add chopped onion and minced garlic; cook until the onion is translucent.
- Stir in the black beans, enchilada sauce, corn, rice, chili powder, cumin, salt, and pepper.
- Bring to a simmer, then reduce heat and cook for 5-7 minutes until heated through.
- Sprinkle shredded cheese on top and cover until melted.
- Serve with tortilla chips and garnish with chopped cilantro.
