  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • Salt and pepper to taste
  • Olive oil A drizzle for sautéing.
  • Italian seasoning (optional) Enhances flavor.

Method
 

Cooking
  1. In a large skillet, heat a drizzle of olive oil over medium heat.
  2. Add the diced onion and minced garlic, sautéing until the onion is translucent and fragrant.
  3. Increase the heat slightly and add the ground beef, cooking until browned and fully cooked, breaking it up as you go.
  4. Stir in the sliced zucchini and cook for about 5 minutes, until the zucchini is tender.
  5. Add the can of diced tomatoes to the skillet and mix well.
  6. Season with salt, pepper, and Italian seasoning if desired, enhancing the flavors.
  7. Let it simmer for a few minutes, then serve hot.

Notes

Serve warm over rice or pasta, or with crusty bread. Pairs well with salads. Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 3 months.
