  • 2 medium zucchini, sliced Look for firm, bright green zucchini.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz) Check for gluten-free if necessary.
  • 1 teaspoon Italian seasoning Add red pepper flakes for heat.
  • to taste Salt and pepper

Method
 

Preparation
  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and minced garlic, sauté until soft and fragrant, about 3-4 minutes.
  3. Add ground beef to the skillet, cook until browned, breaking it apart as it cooks.
  4. Stir in sliced zucchini, diced tomatoes, Italian seasoning, salt, and pepper.
  5. Cook for an additional 10-15 minutes, until zucchini is tender and everything is heated through.
  6. Serve warm and enjoy!
