Ingredients
  

For the Marinade
  • 1/4 cup soy sauce Use tamari for gluten-free option.
  • 2 tablespoons brown sugar or honey
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 tablespoons sesame oil
Main Ingredients
  • 1 block firm tofu, pressed and cubed Press tofu to remove excess water for better marinade absorption.
  • 1 cup fresh pineapple, cubed Canned pineapple can be used, drain well.

Method
 

Preparation
  1. In a bowl, whisk together soy sauce, brown sugar, rice vinegar, garlic, ginger, and sesame oil to make the teriyaki marinade.
  2. Add the cubed tofu to the marinade and let it sit for at least 30 minutes or up to overnight in the refrigerator.
Grilling
  1. Preheat the grill to medium heat.
  2. Thread the marinated tofu and pineapple onto skewers, alternating between the two.
  3. Grill the skewers for about 8-10 minutes, turning occasionally until the tofu is heated through and has grill marks.
  4. Serve warm with extra teriyaki sauce if desired.

Notes

These skewers pair well with rice or a fresh salad. For a heartier meal, serve with grilled vegetables. Store leftovers in an airtight container in the refrigerator for up to 3 days.
