- In a bowl, whisk together soy sauce, brown sugar, rice vinegar, garlic, ginger, and sesame oil to make the teriyaki marinade.
- Add the cubed tofu to the marinade and let it sit for at least 30 minutes or up to overnight in the refrigerator.
Grilling
- Preheat the grill to medium heat.
- Thread the marinated tofu and pineapple onto skewers, alternating between the two.
- Grill the skewers for about 8-10 minutes, turning occasionally until the tofu is heated through and has grill marks.
- Serve warm with extra teriyaki sauce if desired.
