  • 1 pound steak (such as sirloin or ribeye) Choose a cut based on preference.
  • 2 pieces zucchinis, sliced Add more varieties of vegetables if desired.
  • 1 cup cooked rice (or quinoa) Use white or brown rice; quinoa is gluten-free.
  • 1 tablespoon olive oil For sautéing the zucchini.
  • to taste Salt and pepper Season to preference.
  • 1/2 cup creamy sauce (such as garlic aioli or ranch dressing) Choose a sauce you enjoy.
  • to garnish Fresh herbs (such as parsley or cilantro) Add freshness to the dish.

Method
 

Preparation
  1. Preheat the grill to medium-high heat. Season the steak with salt and pepper.
  2. Grill the steak for 6-7 minutes on each side for medium-rare, or longer to your desired doneness. Remove from the grill and let rest.
Cooking
  1. In a skillet, heat olive oil over medium heat. Add sliced zucchini and sauté for 3-4 minutes until tender.
  2. Slice the grilled steak against the grain.
Assembly
  1. To assemble the bowl, place cooked rice at the bottom, add sautéed zucchini, and top with sliced steak.
  2. Drizzle the creamy sauce over the top and garnish with fresh herbs. Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Best to keep the creamy sauce separate until ready to serve. Experiment with different sauces and vegetables for variety.
