Ingredients
  

Seafood and Marinade
  • 1 lb Shrimp Fresh, peeled and deveined
  • 1 lb Scallops Fresh or frozen
  • 2 tbsp Olive oil Extra virgin recommended
  • 2 tbsp Lemon juice Freshly squeezed
  • 2 cloves Garlic Minced
  • 1 tsp Salt
  • 1/2 tsp Pepper Freshly ground
Vegetables
  • 2 medium Bell peppers Chopped into bite-sized pieces
  • 1 medium Zucchini Chopped into bite-sized pieces
  • 8 count Skewers Soaked in water if wooden

Method
 

Preparation
  1. Soak wooden skewers in water for 30 minutes.
  2. In a bowl, combine olive oil, lemon juice, minced garlic, salt, and pepper.
  3. Add shrimp and scallops to the marinade and let sit for 15 minutes.
Assembly and Cooking
  1. Thread shrimp, scallops, and chopped bell peppers and zucchini onto the skewers.
  2. Preheat the grill to medium-high heat.
  3. Grill skewers for about 3-4 minutes on each side until seafood is cooked through and vegetables are tender.
  4. Serve immediately.

Notes

For serving, arrange skewers on a platter and garnish with fresh herbs. Pair with dipping sauce, rice, or coleslaw. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
