Method
 

Preparation
  1. In a medium bowl, whisk together the maple syrup, sriracha, soy sauce, minced garlic, lime juice, salt, and pepper.
  2. Add the chicken pieces to the bowl, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 30 minutes, ideally a few hours or overnight for maximum flavor.
Grilling
  1. Heat your grill or grill pan to medium-high heat. If using skewers, soak them in water for about 30 minutes to prevent burning.
  2. Once the grill is hot, toss the marinated chicken bites onto the grill. Cook for about 5-7 minutes per side, checking for an internal temperature of 165°F (75°C).
Serving
  1. Once cooked, remove the chicken from the grill and let it rest for a few minutes.
  2. Garnish with chopped scallions and sesame seeds, if desired.
