- In a medium bowl, whisk together the maple syrup, sriracha, soy sauce, minced garlic, lime juice, salt, and pepper.
- Add the chicken pieces to the bowl, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 30 minutes, ideally a few hours or overnight for maximum flavor.
Grilling
- Heat your grill or grill pan to medium-high heat. If using skewers, soak them in water for about 30 minutes to prevent burning.
- Once the grill is hot, toss the marinated chicken bites onto the grill. Cook for about 5-7 minutes per side, checking for an internal temperature of 165°F (75°C).
Serving
- Once cooked, remove the chicken from the grill and let it rest for a few minutes.
- Garnish with chopped scallions and sesame seeds, if desired.
