  • 2 pieces eggs Can substitute with unsweetened applesauce or a flax egg.
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • to taste Optional sweetener Use honey, maple syrup, or any preferred sweetener.

Method
 

Preparation
  1. In a mixing bowl, combine the Greek yogurt, blended oats, eggs, baking powder, and vanilla extract until smooth.
  2. Heat a non-stick skillet over medium heat and lightly grease it.
Cooking
  1. Pour a portion of the batter onto the skillet and cook until bubbles form on the surface.
  2. Flip and cook until golden brown.
  3. Repeat with the remaining batter.
  4. Serve warm, topped with your favorite fruits or syrup.

Notes

Leftover pancakes can be refrigerated for up to 3 days or frozen for up to 2 months. Reheat in the microwave or skillet before serving.
