Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine Greek yogurt, sugar, vegetable oil, eggs, and vanilla extract. Mix well until smooth and creamy.
  3. In another bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Fold in any optional mix-ins if desired.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Baking
  1. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

This cake can be served with powdered sugar, honey, whipped cream, or vanilla ice cream. Store it wrapped tightly at room temperature for up to three days or refrigerate for up to a week. Freeze individual slices for up to three months.
