  • 1 lb Shrimp Use medium to large shrimp, deveined and peeled.
  • 1 cup Cucumber Chopped.
  • 1 cup Tomatoes Chopped.
  • 1 small Red onion Chopped.
  • 1 cup Feta cheese Crumble over the top.
  • 1 each Lemon Juiced.
  • 2 tbsp Olive oil For cooking and seasoning.
  • to taste Salt For seasoning the shrimp.
  • to taste Pepper For seasoning the shrimp.
  • to taste Fresh herbs (like parsley or dill) For garnish.

Method
 

Cooking the Shrimp
  1. Season the shrimp with salt, pepper, and olive oil.
  2. In a skillet, cook the shrimp over medium heat until they are pink and cooked through, about 3-5 minutes.
Assembling the Bowl
  1. Chop the cucumber, tomatoes, and red onion.
  2. In a bowl, combine the cooked shrimp with the chopped vegetables.
  3. Crumble the feta cheese over the top and squeeze fresh lemon juice.
  4. Toss everything together and garnish with fresh herbs.
Serving
  1. Serve immediately or store in the refrigerator for meal prep.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2-3 days. Vegetables may lose crispness over time. Consider adding chili flakes for heat or olives for brininess.
