Ingredients
  

Marinade
  • 1 lb chicken breast, cut into cubes Boneless and skinless
  • 1/4 cup olive oil Substitute with avocado oil if needed
  • 2 tablespoons lemon juice Can substitute with lime juice
  • 2 teaspoons dried oregano Fresh herbs can be used for a vibrant taste
  • 2 cloves garlic, minced
  • to taste Salt and pepper
  • as needed Skewers (wooden or metal) Soak wooden skewers in water for 30 minutes to prevent burning

Method
 

Preparation
  1. In a bowl, whisk together olive oil, lemon juice, oregano, garlic, salt, and pepper.
  2. Add the chicken cubes to the marinade, ensuring all pieces are well coated.
  3. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
Cooking
  1. Preheat the grill to medium-high heat.
  2. Thread the marinated chicken onto skewers.
  3. Grill the kabobs for about 10-15 minutes, turning occasionally, until the chicken is cooked through and no longer pink.
Serving
  1. Serve hot with your choice of sides like Greek salad, rice, or pita bread.

Notes

Store leftover kabobs in an airtight container in the refrigerator for up to 3 days. Reheat in preheated oven at 350°F for about 10 minutes or grill for quick reheating. Marinated chicken can be frozen for up to 2 months.
