For the Bowl
  • 2 cups cooked rice or quinoa Can use any grain preferred
  • 1 cup cherry tomatoes, halved Fresh tomatoes add color and sweetness
  • 1 cucumber, diced Adds crunch and freshness
  • 1 cup red onion, thinly sliced Adjust quantity based on taste preference
  • 1/2 cup feta cheese, crumbled For garnish and flavor enhancement
For the Yogurt Dill Sauce
  • 1 cup Greek yogurt Plain, unsweetened yogurt works best
  • 1 tablespoon fresh dill, chopped Can substitute with dried dill if unavailable
  • 1 teaspoon garlic, minced Adjust based on taste preference
  • 1 tablespoon lemon juice For tanginess

Method
 

Prepare the Chicken
  1. In a bowl, combine olive oil, oregano, garlic powder, lemon juice, salt, and pepper.
  2. Add chicken pieces to the marinade, ensuring they are well coated. Marinate for at least 15 minutes.
Cook the Chicken
  1. Heat a grill or skillet over medium-high heat.
  2. Cook marinated chicken for 5-7 minutes on each side or until cooked through.
Prepare the Yogurt Sauce
  1. In a small bowl, mix Greek yogurt, dill, garlic, lemon juice, salt, and pepper until well combined.
Assemble the Bowls
  1. In serving bowls, layer rice or quinoa, top with cooked chicken, cherry tomatoes, cucumber, red onion, and feta.
  2. Drizzle the yogurt dill sauce over the top and enjoy!
