Ingredients
  

For the Chicken Marinade
  • 1 lb boneless chicken breasts Cut into cubes for skewering
  • 2 tbsp olive oil For marinade and grilling
  • 2 tbsp fresh lemon juice Freshly squeezed
  • 2 cloves garlic Minced
  • 1 tbsp dried oregano For authentic flavor
  • 1 tsp salt
  • 1 tsp black pepper
For the Bowls
  • 2 cups cooked quinoa or rice As a base
  • 1 cup cherry tomatoes Halved
  • 1 cucumber Diced
  • 1 cup red onion Thinly sliced
  • 1 cup diced bell pepper Any color
For the Sauce
  • 1 cup Greek yogurt Plain
  • 1 tbsp dill Fresh or dried
  • 1 clove garlic Minced
  • 1 tbsp lemon juice Freshly squeezed

Method
 

Marinating the Chicken
  1. In a bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Add chicken cubes and mix until coated.
  3. Cover and marinate in the fridge for at least 30 minutes.
Preparing the Sauce
  1. In a separate bowl, mix Greek yogurt, dill, garlic, and lemon juice.
  2. Set aside in the refrigerator.
Cooking the Chicken
  1. Preheat grill to medium-high heat.
  2. Thread marinated chicken onto skewers and grill for about 10 minutes, turning occasionally.
Assembling the Bowl
  1. In each bowl, layer quinoa or rice, grilled chicken, tomatoes, cucumber, onion, and bell pepper.
  2. Drizzle with yogurt sauce before serving.

Notes

Feel free to customize the veggies based on what you have on hand. This dish can also be served with pita bread for added texture.
