Ingredients
  

For the Chicken Marinade
  • 4 pieces boneless, skinless chicken breasts Use fresh for best results.
  • 1/4 cup olive oil Extra virgin recommended.
  • 2 tablespoons lemon juice Freshly squeezed for more flavor.
  • 2 teaspoons dried oregano Add more for intense flavor.
  • 1 teaspoon garlic powder Fresh minced garlic can also be used.
  • to taste salt and pepper Adjust as necessary.
For Serving
  • 4 pieces pita bread Warm before serving.
  • 1 cup tzatziki sauce Store-bought or homemade.
  • 1 cup sliced cucumbers Fresh and crisp.
  • 1 cup sliced tomatoes Choose ripe, juicy tomatoes.
  • 1 cup sliced red onion Soak in water if too strong.

Method
 

Preparation
  1. In a crockpot, combine the olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
  2. Add the chicken breasts to the crockpot and coat them well with the marinade.
Cooking
  1. Cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender.
  2. Shred the chicken with two forks and mix it thoroughly with the juices from the crockpot.
Assembly
  1. To serve, fill pita bread with the shredded chicken, top with tzatziki sauce, and add your choice of cucumbers, tomatoes, and red onion.
  2. Enjoy your delicious Greek chicken pitas!

Notes

For more intense flavor, marinate chicken in the refrigerator for at least 30 minutes, or ideally overnight. Leftovers can be stored in the refrigerator for up to 3 days. Reheat chicken gently to avoid drying out.
