Ingredients
  

For the Gyro Bowls
  • 1 lb chicken breast, marinated Use your favorite marinade
  • 2 cups cooked rice or quinoa Prepare according to package instructions
  • 1 cup cucumber, diced
  • 2 tomatoes diced
  • 1 red onion thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup feta cheese
  • 1/4 cup Greek yogurt
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder

Method
 

Preparation
  1. Marinate the chicken breast in your favorite marinade for at least 30 minutes.
  2. Grill or sauté the chicken until fully cooked, then slice.
Cooking the Base
  1. Prepare the rice or quinoa according to package instructions.
Vegetable Mixture
  1. In a bowl, combine the cucumber, tomatoes, onion, olives, and parsley.
Lemon Feta Sauce
  1. Blend the feta cheese, Greek yogurt, lemon juice, garlic powder, salt, and pepper until smooth.
Assembly
  1. Assemble the bowls by adding a base of rice or quinoa, topped with sliced chicken and the veggie mixture, and drizzled with the lemon feta sauce.

Notes

For the best flavor, marinate chicken longer if time allows. The bowls can be served with a side salad or warm pita bread. Store leftovers in airtight containers in the fridge for up to 3 days.
