Ingredients
  

For the Chicken
  • 1 lb Chicken (boneless, skinless, cut into strips)
  • 2 tbsp Olive oil
  • 2 cloves Garlic (minced)
  • 1 tbsp Oregano
  • 2 tbsp Lemon juice
  • 1 tsp Salt
  • 1 tsp Pepper
For the Bowl Assembly
  • 1 cup Cucumber (diced)
  • 1 cup Tomato (diced)
  • 1 small Red onion (sliced)
  • 1/2 cup Feta cheese (crumbled)
  • 1/2 cup Greek yogurt
  • 2 tbsp Fresh dill or parsley (chopped)
  • 4 pieces Pita bread (optional)

Method
 

Preparation
  1. In a bowl, marinate chicken strips with olive oil, minced garlic, oregano, lemon juice, salt, and pepper for at least 30 minutes.
Cooking
  1. Grill or sauté the marinated chicken until cooked through.
  2. In a separate bowl, mix Greek yogurt, crumbled feta cheese, lemon juice, and chopped dill or parsley to make the creamy lemon feta sauce.
Assembly
  1. Assemble the bowls by placing cooked chicken on a bed of diced cucumbers, tomatoes, and red onions.
  2. Drizzle with the feta sauce and serve with pita bread if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. To maintain freshness, keep the components separate if possible. Reheat the chicken gently.
