  • 4 medium golden beets Roasted until tender
  • 4 cups mixed greens Any choice of fresh greens
  • 1 cup creamy cheese Feta or goat cheese recommended
  • 1/2 cup nuts Walnuts or pecans work well
Vinaigrette Dressing
  • 1/4 cup olive oil Extra virgin recommended
  • 2 tablespoons vinegar Balsamic or apple cider vinegar
  • 1 teaspoon salt To taste
  • 1/2 teaspoon pepper To taste

Method
 

Preparation and Roasting
  1. Preheat the oven to 400°F (200°C).
  2. Wrap the golden beets in aluminum foil and roast them for about 45-60 minutes, or until tender.
  3. Let the beets cool, then peel and slice.
Assemble Salad
  1. In a salad bowl, combine the mixed greens, sliced golden beets, creamy cheese, and nuts.
  2. In a small bowl, whisk together olive oil, vinegar, salt, and pepper to make the vinaigrette.
  3. Drizzle the vinaigrette over the salad and toss gently to combine.

  1. Serve immediately and enjoy!

Notes

For a fun twist, try adding fresh herbs like basil or mint. Store leftovers in an airtight container for up to 3 days, but note that greens may wilt.
