  • 5 cups Mixed greens Any preferred type (e.g., arugula, spinach)
  • 1 cup Creamy cheese (e.g., goat cheese or feta) Add richness to the salad
  • 1/2 cup Crunchy nuts (e.g., walnuts or pecans) For added texture
Vinaigrette Ingredients
  • 3 tablespoons Olive oil Base of the dressing
  • 2 tablespoons Balsamic vinegar or lemon juice For acidity
  • 1 teaspoon Salt To taste
  • 1/2 teaspoon Pepper To taste

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wrap the golden beets in aluminum foil and roast them in the oven for about 45 minutes or until tender. Let them cool, then peel and slice.
Assembly
  1. In a large bowl, combine the mixed greens, roasted golden beets, creamy cheese, and crunchy nuts.
  2. In a separate bowl, whisk together olive oil, balsamic vinegar or lemon juice, salt, and pepper to make the vinaigrette.
  3. Drizzle the vinaigrette over the salad and toss gently to combine.
  4. Serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Keep the dressing separate to maintain freshness of the greens.
