Ingredients
  

Filling
  • 1 cup Feta cheese, crumbled
  • 1/4 cup Cranberry honey
  • 2 tablespoons Lemon juice Freshly squeezed for best flavor
  • 1/4 cup Herbs (e.g., dill, parsley), chopped Feel free to substitute with favorite herbs
  • 1/3 cup Pistachios, chopped Can substitute with other nuts
Wrapper
  • 1 package Phyllo dough Thawed if frozen
  • 1/4 cup Olive oil For brushing layers
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix crumbled feta cheese with cranberry honey, lemon juice, chopped herbs, and pistachios.
  3. Lay out a sheet of phyllo dough on a clean surface and brush with olive oil. Repeat with two more sheets of phyllo.
  4. Place a generous tablespoon of the feta mixture at one end and roll it up, tucking in the sides to create a roll.
  5. Place the rolls seam side down on a baking sheet lined with parchment paper. Brush the tops with olive oil.
Baking
  1. Bake for 15-20 minutes or until golden brown.
  2. Let cool slightly before serving.

Notes

Serve warm with yogurt dip or tzatziki. Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat in a preheated oven at 350°F (175°C) for 10 minutes.
