  • 600 g tomatoes Ripe and juicy for the best flavor.
  • 500 g pre-cooked gnocchi
  • 2 cloves of garlic Minced.
  • 250 ml cream or crème fine Can substitute with low-fat or plant-based cream.
  • 1 piece mozzarella Fresh mozzarella recommended for a delightful melt.
  • spices (basil, oregano, salt, pepper) Adjust spices according to taste.
  • 2 tbsp olive oil

Method
 

Preparation
  1. Sauté the minced garlic in a splash of olive oil over medium heat until fragrant but not browned.
  2. Add the chopped tomatoes and cook until softened, mashing lightly to create a chunky sauce.
  3. Stir in the cream and let simmer gently, allowing flavors to meld.
  4. Add the spices to the sauce and toss in the gnocchi, simmering for about 3-5 minutes.
  5. Just before serving, add the diced mozzarella to the pot, letting it melt slightly.

Notes

Serve hot and garnish with fresh basil and grated Parmesan cheese. Store leftovers in an airtight container for up to 3 days. Add cream or water when reheating.
